You Will Need:

  • 130 g of roughly chopped spinach and kale
  • 375 ml of milk or milk alternative, such as almond milk
  • 155 g mix of mango, pineapple and kiwi
  • 1/2 tsp of freshly grated ginger
  • 1/2 tsp of lemon juice

Steps

  1. Add the spinach, kale and milk to a blender and blend well.
  2. Then, add the fruit, ginger and lemon juice and blend until smooth. If you find your smoothie too thick, you can add more milk a teaspoon at a time until you get your desired consistency.

Orange Delight (Serves 2)

You Will Need:

  • 1 carrot, peeled and chopped
  • 1 banana, peeled and chopped
  • 1 clementine, peeled and segmented
  • 1/2 tsp freshly grated ginger
  • 6 ounces freshly squeezed orange juice
  • 2 tbsp fresh lemon juice
  • 1/4 tsp turmeric
  • 1/4 tsp cinnamon
  • 75 g plain yogurt
  • 130 g ice

Steps:

  1. Add all the ingredients to your blender in the order they are listed in and blend well until smooth.
  2. Then, taste to test. If your smoothie is not sweet enough, you can add honey for a bit of sugar. On the other hand, if your smoothie is too thick, add a cube or two of ice.

Mushroom Broth (Serves 4)

You Will Need:

  • 50g unsalted butter
  • 1 large onion, finely chopped
  • 2 garlic gloves, crushed
  • 300g chopped mushrooms
  • 25g plain flour
  • 400ml milk
  • 400ml chicken or vegetable stock
  • Salt to taste
  • Pepper to taste

Steps:

  1. Melt the butter in a large frying pan on a medium heat, then sauté the onion and garlic until soft and brown
  2. Add the mushrooms and cook gently for five minutes
  3. Add the flour and stir well for 30 seconds to a minute
  4. Stir in the milk, stock, salt and pepper
  5. Liquidise and bring back up to serving temperature

Lentil Dahl

You Will Need:

  • 1 teaspoon olive oil 
  • 2 diced onions
  • 3 finely chopped garlic cloves
  • 1 tablespoon fresh ginger, grated
  • ½ teaspoon dried chilli flakes
  • ½ teaspoon cumin seeds
  • ½ teaspoon coriander seeds
  • ½ teaspoon mustard seeds
  • 2 teaspoon ground turmeric
  • 1 teaspoon garam masala 
  • 200g dried red lentils, uncooked (rinsed and drained)
  • 400ml chopped tomatoes
  • 400ml coconut milk
  • 500ml vegetable stock
  • Salt and pepper
  • Juice of half a lemon
  • 2 handfuls fresh spinach, washed

Steps:

  1. Heat the olive oil in a large pan over a medium heat. Add the onion and cook gently for 5 minutes until soft. Add the garlic, ginger and red chilli and cook for a few more minutes.
  2. Grind the cumin, coriander and mustard seeds together lightly, then add them to the pan. Then, add the turmeric and garam masala and cook for one more minute. 
  3. Add the red lentils, chopped tomatoes, the juice from the chopped tomatoes, coconut milk and stock, then stir to combine. Season with salt and pepper and cook on a medium/low heat for 15-20 minutes until it thickens.
  4. Stir in the lemon juice and spinach until it wilts. Serve warm with rice or poppadoms

Immune Boosting Recipes for Pumpkin Peanut Stew

Pumpkin Peanut Stew

You Will Need:

  • 1 tablespoon olive oil
  • 1 medium onion, dices
  • 2 garlic cloves, minced
  • 2 teaspoons powdered ginger
  • 1 tablespoon brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon curry powder
  • 250 ml vegetable broth
  • 425 g pumpkin
  • 2 medium gala apples, diced
  • 2 medium carrots, chopped
  • 2 medium red potatoes, diced
  • 1 large stalk celery, diced
  • 96 g chunky reduced-fat or regular peanut butter
  • ¼ – ½ teaspoon hot sauce
  • Salt and pepper, to taste
  • Crushed peanuts or pumpkin seeds, for garnish

Steps:

  1. Heat the olive oil in a large pan over a medium heat. Add the onion and garlic and cook for about 5 minutes until the onion is softened, stirring regularly.
  2. Remove the pan from the heat. Add the powdered ginger, brown sugar, cinnamon and curry powder, and stir until combined.
  3. Add the broth and pumpkin and mix well. Mix in the apples, carrots, potatoes and celery. Put the pan back on a reduced heat to simmer.
  4. Cover and simmer for about 25 minutes, until the vegetables and apples are tender.
  5. Remove from the heat and allow it to cool slightly. Stir in the peanut butter. Season with hot sauce, salt and pepper.
  6. To serve, garnish with crushed peanuts or pumpkin seeds and herbs of your choice.
